Mornings tend to be a little rushed around here lately. No matter how much I prep the night before, I always feel like I don’t have enough time in the morning before we need to head out the door. Add in the fact that I’m not a huge breakfast food fan and it makes it extra difficult to fit anything in.

Let me clarify my breakfast food issues. Call me weird but I don’t love eggs! I really wish I did but I’ll only eat them if they are covered with cheese and sausage. At that point they aren’t that nutritious anymore. I love pancakes and waffles but can’t live off of those every day or I’ll need to fit in extra workouts to makeup for my indulgent breakfast. I also love oatmeal (yay for something healthy!), but often don’t have enough time to cook it in the morning. I totally jumped on the overnight oats trend and lived on that for a while, which was super easy and tasty. I tried to get on the smoothie bowl trend but that was too much work for me in the morning and I never felt that creative when it came to fun combinations. My latest breakfast obsession is this super delish chia parfait. Since you have to make it the night before, it makes it easy in the morning to grab it out of the frig and start munching away. It’s also portable enough for those morning when I’m super rushed and need to eat in the car (not the safest option, I know). An added bonus is that I get to use one of the hundreds of mason jars I have at home (mason jars are an obsession of mine).

I typically stick to a set of toppings for a week and then switch it out for something new and exciting. That’s what is so great about this breakfast–you can change it up whenever you get bored. A few of my faves are nut butter, berries, granola, nuts, cinnamon, coconut flakes, pineapple, mango, apple, flax seed, oats, hemp hearts, chocolate pieces, and fruit jam (I feel like I’m forgetting a few, sorry).

Chia Breakfast Parfait

1/2 cup milk (I use almond milk)
1/2 cup yogurt (I use nonfat Greek)
3 tablespoons chia seed
1 tablespoon maple syrup or other sweetener
Favorite toppings (this week I’m loving blueberries, banana, almonds, and granola)

In a mason jar or any container with a lid, combine the milk, yogurt, chia seeds, and sweetener and stir until combined. Refrigerate mixture for at least one hour or overnight. Add your favorite toppings before eating.
